No-bake chocolate chai energy bites recipe

Growing up, my favourite part of celebrating the Festival of Lights with my family was the sweets. I would literally devour a whole box of sweets in one night...

No-bake chocolate chai energy bites

Ingredients (makes 12 – 15 balls)

  • 2 cups of oat flour or almond flour
  • 1/3 cup runny honey
  • 1/3 cup coconut oil, melted
  • 1/3 cup unsweetened fine coconut
  • 1/4 cup cocoa powder
  • 2 tbsp almond butter
  • 1.5 tbsp chai spice blend (2 tsp cinnamon, 1 tsp ground cardamom, 1/2 tsp ground ginger)
  • 1/2 tsp salt
  • Coconut flakes, crush pistachios or cocoa powder to coat balls
 

Method

Blend rolled oats or almonds in a blender or food processor to make into a flour. Melt the coconut oil in a pot and whisk in honey. Combine all ingredients in a bowl and mix well. Form into balls (2 tbsp of batter for each) and roll in coconut flakes, crushed pistachios or cocoa powder.
